Horizontal or Vertical Dryer?

While both types of drying can achieve the same results, there are some differences that make horizontal dryers more efficient than vertical dryers, let's find out what they are.

VERTICAL DRYER DISADVANTAGES:

  • As the air flow is vertical, it is necessary to invert the trays during drying in order to achieve even drying.
  • Sometimes the 'plug' effect of the air flow can occur. In fact, if the baskets at the bottom are overloaded, air circulation is restricted, making drying less efficient. VIVO Dry dryers are however equipped with a special central hole that still allows proper airflow circulation.

ADVANTAGES OF THE HORIZONTAL DRYER

  • The horizontal air flow hits the food on each side, allowing trays to be loaded to the maximum
  • The horizontal dryer is faster and gives a much more homogenous drying result in less time.
  • It optimises consumption and is faster in drying.
  • You can put larger foodstuffs inside and also carry out preparations other than drying
  • It can be used for cooking in vacuum bags at low temperatures, fermenting food (e.g. yoghurt) or you can use it to thaw food.
