67-layer AUS-10 Damascus steel

This type of steel is produced in Japan by the company Aichi Steel in the city of Tokai and is a composite material.

The core is made of AUS 10 steel while both sides are made of SUS 430 steel with 33 layers per side, giving it a strong resistance to corrosion.

Steel is vacuum-hardened to a hardness of 60/62 HRC.

HANDLE
IN TUSCAN OLIVE

An essence with unmistakable veins

Handle made of Tuscan Olive wood.

This typical Italian wood is found in several regions and is widespread in the Tuscan hills.

The plants, from whose fruits an excellent quality oil is obtained, give us this precious essence with its unique grain and unmistakable scent.

We have used it in its natural state, essential in form, with a colouring that is intensified and modified by its use and the oily substances it contains.

It is an emblematic witness to our roots and an ambassador of our precious craftsmanship traditions recognised the world over.

THE COMPLETE SERIES

The Damascus steel knife series currently has 10 different blades for the main functions in the kitchen.

BY HAND

Convex wedge grinding in two passes

This type of sharpening is the best in terms of cutting penetration and sharpening life.

The final sharpening process is carried out manually in two Phases:
Phase 1: The wedge is created, curved in a convex shape on the stone with 12K grit.

Stage 2: The shape is consolidated and a final finishing pass is made on the edge with 30K grit, which is very close to polishing.
